Book release: Wasted by Conor Spacey
Blasta Books #7: Wasted is a capsule collection of recipes that have come from identifying some of the most wasted food items in our homes. This book will help householders to stop wasting food and turn perfectly good ingredients into delicious dishes.
The book’s ulterior motive may be to get us to think differently about ingredients and waste, but the driver for all these plant-based recipes is flavour. It’s also a good source of inspiration for chefs.
Author Conor Spacey has worked in the food industry for over 30 years, but over the last 15 years he’s done a deep dive into sustainability and our broken food system to become one of the industry leaders in zero waste kitchens. Most recently, Conor has worked with the United Nations Sustainable Development Goals to establish the Chefs’ Manifesto, a community of over 900 chefs across 100 countries that works with many NGOs to make real change. Conor has received many accolades for his work in sustainability and attends events around the world for pop-ups, talks and demos. You can also catch him on Virgin Media’s Six O’clock Show showcasing zero waste meals. @spacey_chef

“Wasted is so engaging, so wise, that you have to pinch yourself to remember that it’s a book about the stuff we all throw away every day. Like the best works of art, it forces you to both look closely and to think carefully. Spacey gives us solutions, and he does so genially and sympathetically: if you feared a sermon from the pulpit, relax. Wasted is like an appointment with your food therapist.” – John & Sally McKenna, McKennas Guides
